    Crush mustard seed , cumin seed , and black peppercorns in a mortar and pestle .

    Prep onion (minced) , garlic (grated) , ginger (grated) , and green chiles (minced) .

    Grate or finely dice roma tomatoes .

    Add ground beef to a bowl and mix in about water .

    Mix the beef until it is smooth and all the clumps are broken up.

    Set a pan over medium heat and add neutral oil .

    Once hot, add cinnamon stick , cloves , the peppercorns, mustard seed, cumin seed and bay leaf .

    Toast for 10-20 seconds until fragrant, being careful not to burn.

    Add the onion, garlic, ginger, and chiles.

    Cook down for 5 to 8 minutes, stirring occasionally.

    Stir in ground turmeric , ground hot chili powder , and garam masala .

    Add a sprinkle of salt and cook for another 30 seconds.

    Add the tomatoes and cook for 5 minutes.

    Turn the heat to high.

    Add the ground beef with another little sprinkle of salt.

    Break apart while frying for about 8 to 10 minutes until cooked through.

    Toss in frozen peas and stir in until cooked through.
