1Crush mustard seed , cumin seed , and black peppercorns in a mortar and pestle .mustard seed: 1 tsp, cumin seed: 1 tsp, black peppercorns: 10

2Prep onion (minced) , garlic (grated) , ginger (grated) , and green chiles (minced) .onion (minced): 1/2, garlic (grated): 2 cloves, ginger (grated): 1 in, green chiles (minced): 3

3Grate or finely dice roma tomatoes .roma tomatoes: 2

4Add ground beef to a bowl and mix in about water .ground beef: 1 lb, water: 1 c

5Mix the beef until it is smooth and all the clumps are broken up.

6Set a pan over medium heat and add neutral oil .neutral oil: 15 ml

7Once hot, add cinnamon stick , cloves , the peppercorns, mustard seed, cumin seed and bay leaf .cinnamon stick: 1, cloves: 2, bay leaf: 1

8Toast for 10-20 seconds until fragrant, being careful not to burn.

9Add the onion, garlic, ginger, and chiles.

10Cook down for 5 to 8 minutes, stirring occasionally.

11Stir in ground turmeric , ground hot chili powder , and garam masala .ground turmeric: 1 tsp, ground hot chili powder: 1 tsp, garam masala

12Add a sprinkle of salt and cook for another 30 seconds.salt

13Add the tomatoes and cook for 5 minutes.

14Turn the heat to high.

15Add the ground beef with another little sprinkle of salt.

16Break apart while frying for about 8 to 10 minutes until cooked through.

17Turn the heat to low.

18Toss in frozen peas and stir in until cooked through.frozen peas: 200 g

19Turn the heat off.

20Add lemon juice and a sprinkle of garam masala.lemon juice

21Taste it and add more salt as needed.
